Vegetable Salad



4 tablespoons Homemade Healthy Mayonnaise
2 carrots
2 parsley roots
3 medium size potatoes 
4 hard-boiled eggs
3 dill pickles
1 sour apple
1 can green peas
1 tablespoon chopped leek
1 tablespoon mustard
salt, pepper


Wash and cook the vegetables (carrots, parsley roots, potatoes) and eggs. Drain and allow to cool.

Dice all cooked vegetables, dill pickles, apple and hard-boiled eggs. Chop the leek. Drain the green peas and dill pickles. Combine all the ingredients with the Homemade Healthy Mayonnaise and mustard. Season with salt and fresh ground pepper. Allow to sit for 1 hour in the refrigerator. Garnish with fresh parsley.
