3 tablespoons Homemade Healthy Mayonnaise
1 tablespoon chopped parsley
Wash and cook the potatoes. Cool to the room temperature. Peel cooked potatoes and a carrot. Dice potatoes and grate the carrot on a large mesh grater, then place in a bowl. Add chopped parsley, season with salt and fresh ground pepper. Mix well. Add 3 tablespoons Homemade Healthy Mayonnaise, and mix well again. Taste and add more seasoning if needed. Allow to sit for 1 hour in the refrigerator. Garnish with fresh parsley.
