Cole Slaw Salad

Ingredients:

2 cups shredded green cabbage
1 carrot (1/4 cup shredded)
1/2 lemon or white vinegar
3 tablespoons Homemade Healthy Mayonnaise
1 tablespoon sugar or to taste
1/2 teaspoon salt

Instructions:  

Peel and shred a carrot. In a medium bowl, combine finely shredded cabbage and carrot. Add 1/2 teaspoon salt, then mix well. Allow to sit for 5 minutes. Add sugar, freshly squeezed lemon juice and mix well again. At the end, add 3 tablespoons Homemade Healthy Mayonnaise and mix well to combine and taste for seasoning; add more salt, lemon juice or sugar if desired. Allow to sit for 20 minutes in the refrigerator, then serve.

Potato Salad

Ingredients:

2 potatoes
1 carrot
3 tablespoons Homemade Healthy Mayonnaise
1 tablespoon chopped parsley
salt, pepper

Instructions:

Wash and cook the potatoes. Cool to the room temperature. Peel cooked potatoes and a carrot. Dice potatoes and grate the carrot on a large mesh grater, then place in a bowl. Add chopped parsley, season with salt and fresh ground pepper. Mix well. Add 3 tablespoons Homemade Healthy Mayonnaise, and mix well again. Taste and add more seasoning if needed. Allow to sit for 1 hour in the refrigerator. Garnish with fresh parsley.

Spelt French Toast

There are many ways to eat french toast. This is the way my wife eats french toasts. What you think?img_1242

Ingredients:

6 slices spelt bread
2 eggs
3 tablespoons milk
salt, pepper
coconut oil
6 slices ham
1 tomato
ketchup

Instructions:

In a bowl, whisk together eggs, milk, salt and fresh ground pepper. In a medium skillet, heat coconut oil over medium heat. Dip bread in egg mixture. Fry slices until golden brown, then flip to cook the other side. Serve with a ham, tomato and ketchup.

Hard Boiled Eggs with Mayonnaise

Ingredients:

6 teaspoons Homemade Healthy Mayonnaise
eggs
scallion
sweet red paprika powder 
salt, pepper

Instructions:

Bring water to a boil in a pot. Carefully, place the eggs in the water. Boil the eggs for exactly 8 minutes. Pour water out from eggs and pour cold water to shock eggs and stop from cooking.

Peel the eggs and cut in half lengthwise. Place on each egg 1 teaspoon Homemade Healthy Mayonnaise , season with salt and fresh ground pepper, then sprinkle with sweet red paprika powder. Garnish with chopped scallion.

Vegetable Salad

Ingredients:

4 tablespoons Homemade Healthy Mayonnaise
2 carrots
2 parsley roots
3 medium size potatoes 
4 hard-boiled eggs
3 dill pickles
1 sour apple
1 can green peas
1 tablespoon chopped leek
1 tablespoon mustard
salt, pepper

Instructions:

Wash and cook the vegetables (carrots, parsley roots, potatoes) and eggs. Drain and allow to cool.

Dice all cooked vegetables, dill pickles, apple and hard-boiled eggs. Chop the leek. Drain the green peas and dill pickles. Combine all the ingredients with the Homemade Healthy Mayonnaise and mustard. Season with salt and fresh ground pepper. Allow to sit for 1 hour in the refrigerator. Garnish with fresh parsley.

Potato Pickle Soup

Ingredients:

2 cups dill pickles, shredded
1-2 cups pickle juice, from the pickle jar
10 cups water
3 medium size potatoes ( 4 cups dice potatoes)
2 carrots
3 all spices
whole black pepper
2 bay leaves
1/2 teaspoon bear’s garlic or 1 garlic clove
1 tablespoon fine chopped fresh dill
1/2 cup heavy cream
1 tablespoon butter
salt

Instructions:

Wash and peel carrots and potatoes. Dice the potatoes into medium size. Grate the carrots on a grater with large mesh.

In a large pot combine together water, potatoes and carrots. Add  a whole black pepper, all spices, garlic and bay leaves. Bring to a boil and cook until potatoes are tender about 20 minutes

Meanwhile, grate the pickles on a grater with large mesh. Heat the 1 tablespoon butter in a medium skillet over medium heat. Add the pickles and cook about 5 minutes, stir occasionally.

Add prepared pickles to boiling broth and continue to a boil. Add pickle juice and salt to taste. Due to the fact that the soup taste depends on the intensity of the taste of pickles please be careful during the seasoning.

At the end, add heavy cream and chopped dill, cook about another 5 minutes. Taste and add more seasoning if needed.

Homemade Healthy Mayonnaise

Healthy Mayonnaise made from healthy Rapeseed oil which give you a lot healthy benefits.

Ingredients:

1 egg yolk*
1 cup rapeseed oil
2 tablespoons honey or powdered sugar
1/2 teaspoon salt
1 tablespoons mustard
1 tablespoons fresh squeezed lemon juice or white wine vinegar

Instructions

Place a egg in a boiling water for few seconds. Combine egg yolk, lemon juice, mustard, honey and salt in a glass bowl. Start whisking briskly or mixing (hand mixer) or bland, then start adding the oil a few drops at a time until the liquid seems to thicken and lighten a bit, then increase the oil flow to a constant stream. Continue mixing until all of the oil is incorporated and  the mayonnaise becomes uniform and very dense. Taste and add more seasoning if needed. Store in the refrigerator for about a week.

*Because mayonnaise contains raw eggs, it’s important to source ones that are high quality, use only fresh, properly refrigerated, clean grade A or AA eggs with intact shells, and avoid contact between the yolks or whites and the shell, use shell eggs that have been treated to destroy salmonella, by pasteurization or another approved method.

(Note: While the risk of contracting illness from raw eggs is very low, children, the elderly, those who are pregnant, and/or those who have compromised immune systems should avoid consuming raw eggs.)

Sweet Chocolate Snack

Everyone needs something sweet once awhile. You can buy chocolate bars or you can make your own version, a little healthier one.

Ingredients:

2 dark chocolate (90 % cocoa)
nuts: sliced almonds and chopped pecans
pitted dates

Instructions:

In cooking pot, bring water to a boil and then lower a heat. On the top of a pot, place a bowl with a chocolate so the steam from the water will help to melt a chocolate. You can crush a chocolate into smaller pieces for a faster melt. Meanwhile, dice dates and crush nuts (you can also add dry cranberry or raisins). Add dates and nuts into the melted chocolate and mix together. Pour out chocolate on a sheet of a baking paper. Sprinkle with unsweetened shredded coconut. Refrigerate until the chocolate hardens, then break into small pieces.

Fava Beans

Healthy snack

Ingredients:

12 pcs  fava beans 
sea salt

Instructions:

Shell the beans from the fava pods, then wash the beans and place into a bowl, pour boiling water over beans (It will be easier to digest). After 10 minutes drain well. In a pot with vegetable steamer basket, steam the fava beans around 15 minutes (when fave bean is young, and for 30 minutes or more when is older) until tender inside and skin wrinkle. Drain. Place on a plate and sprinkle with sea salt. During eating, peel the outer skin from beans.

Smoked White Fish Melt

Ingredients:

1 whole smoked white fish 
3 hero breads
8-10 oz. Mozzarella or Swiss cheese

Tomato Sauce for fish
4 plum tomatoes
1/2 medium onion
2 garlic cloves
2 bay leaves
2 all spices
salt, ground black pepper
3/4 tablespoon sugar 

Instructions:

Make the sauce: Bring water to a boil in a pot. Meanwhile make a cross sign with a knife on the bottom of a tomato, on the top – dig out the green part. Decrease heat in a cooking pot and put tomatoes in. Make sure they are fully covered by the water. Keep tomatoes in water for about 3 to 5 minutes. Take tomatoes out and put them into cold water. At this point you will see a skin peeling off easily. Take off the rest of the skin. Cut tomatoes into quarters.

Heat the 1 tablespoon coconut oil in a large skillet over medium heat. Add the pressed garlic and chopped onion, then saute , stirring, about 2-3 minute. Add tomatoes, stir occasionally until soften (around 15 minutes).

Mixture from a skillet move into blender and blend. Take out the mixture and put it back into skillet. Add bay leaves, salt, black pepper, sugar and all spices. Bring to a boil, then reduce the heat and simmer, stirring occasionally, until thickened, about 20 minutes. Taste, adjust seasoning. Let cool down aside

Separate the smoked white fish meat from the bones and skin. Combine together the fish meat with the sauce.

Cut the each Hero bread in half, crosswise, and slice lengthwise to open for the 2 sandwiches. Grate the cheese on a grater.

Place our fish and sauce mixture on each slice of a hero bread. Then sprinkle with grater cheese. Place them into preheated oven at 356 ºF and bake until cheese is melted and hero bread crispy about 10 minutes.
