Napa Cabbage Salad

Ingredients:

1 small napa cabbage  (6-8 cups chopped)
2 cups grape tomatoes
2 kirby cucumbers
2 tablespoons finely chopped fresh dill
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1 teaspoon dried basil
salt, fresh ground black pepper
1/2-1 lemon 
2 tablespoons rapeseed oil

Instructions:

Wash the vegetables, then chop the napa cabbage, dill and dice the cucumber. In a bowl, mix the oil, fresh squeezed lemon juice, thyme, oregano, basil, fresh dill. Add the chopped napa cabbage, diced cucumber and tomatoes, then toss. Add salt and fresh ground pepper. Toss again and serve.

Ham and Swiss Cheese Salad

Ingredients:

3-4 tablespoons Homemade Healthy Mayonnaise
3 hard-boiled eggs
5 oz. Swiss cheese
7 oz. ham
12 oz cooked or canned corn
4 dill pickles 
1 tablespoon mustard
salt, pepper

Instructions:

Dice dill pickles, ham and hard-boiled eggs and shred a Swiss cheese. Drain the corn and dill pickles well. Combine all the ingredients with the Homemade Healthy Mayonnaise  or any mayonnaise and mustard. Season with salt and fresh ground pepper. If the salad is a tasteless need to add more dill pickles. Allow to sit for 1 hour in the refrigerator.

Radish and Yogurt Salad

Ingredients:

8 radish
1 tablespoon chopped  scallion 
2 tablespoons  sour cream or organic plain yogurt
fresh ground pepper, salt

Instructions:

Wash and slice a radish, chop scallion. Then, simply mix together the sliced radish, chopped scallion, salt and pepper in a bowl. Add a yogurt. Mix well. Taste, adjust seasonings and allow to sit for 20 minutes in the refrigerator, then serve.

Leek and Pineapple Salad

Ingredients:

1 cup chopped leek
2 cup diced pineapple
2 diced hard-boiled  eggs 
3-4 tablespoons corn
2-3 tablespoons plain yogurt
salt, pepper

Instructions:

Pour hot water into chopped leek and keep for about 3 minutes. Then drain. In a bowl, combine together leek, pineapple, eggs, corn and yogurt. Add salt and pepper.

Cole Slaw Salad

Ingredients:

2 cups shredded green cabbage
1 carrot (1/4 cup shredded)
1/2 lemon or white vinegar
3 tablespoons Homemade Healthy Mayonnaise
1 tablespoon sugar or to taste
1/2 teaspoon salt

Instructions:  

Peel and shred a carrot. In a medium bowl, combine finely shredded cabbage and carrot. Add 1/2 teaspoon salt, then mix well. Allow to sit for 5 minutes. Add sugar, freshly squeezed lemon juice and mix well again. At the end, add 3 tablespoons Homemade Healthy Mayonnaise and mix well to combine and taste for seasoning; add more salt, lemon juice or sugar if desired. Allow to sit for 20 minutes in the refrigerator, then serve.

Potato Salad

Ingredients:

2 potatoes
1 carrot
3 tablespoons Homemade Healthy Mayonnaise
1 tablespoon chopped parsley
salt, pepper

Instructions:

Wash and cook the potatoes. Cool to the room temperature. Peel cooked potatoes and a carrot. Dice potatoes and grate the carrot on a large mesh grater, then place in a bowl. Add chopped parsley, season with salt and fresh ground pepper. Mix well. Add 3 tablespoons Homemade Healthy Mayonnaise, and mix well again. Taste and add more seasoning if needed. Allow to sit for 1 hour in the refrigerator. Garnish with fresh parsley.

Vegetable Salad

Ingredients:

4 tablespoons Homemade Healthy Mayonnaise
2 carrots
2 parsley roots
3 medium size potatoes 
4 hard-boiled eggs
3 dill pickles
1 sour apple
1 can green peas
1 tablespoon chopped leek
1 tablespoon mustard
salt, pepper

Instructions:

Wash and cook the vegetables (carrots, parsley roots, potatoes) and eggs. Drain and allow to cool.

Dice all cooked vegetables, dill pickles, apple and hard-boiled eggs. Chop the leek. Drain the green peas and dill pickles. Combine all the ingredients with the Homemade Healthy Mayonnaise and mustard. Season with salt and fresh ground pepper. Allow to sit for 1 hour in the refrigerator. Garnish with fresh parsley.

Cucumber Salad

Ingredients:

3 Kirby cucumbers
2 tablespoons sour cream or plain yogurt
salt, fresh ground pepper
1 tablespoon chopped fine fresh dill 

Instructions:

Peel the cucumbers, then cut into thin slices. Add salt and let sit for 10 minutes. After 10 minutes, drain well. Add chopped dill and pepper. Mix well. Taste, adjust seasoning. Then add sour cream or plain yogurt and combine together.

Beet Salad

Ingredients:

1 large beetroot
2 teaspoons vinegar
3/4 tablespoon sugar
salt, fresh ground pepper

Instruction:

Wash and cook a beet root in a pot about 1 hour or more until soft. After that, place the beet into cold water, then peel and grate on the grater (a large mesh). Add sugar, vinegar and salt. Mix well. Taste, adjust seasoning. At the end, add fresh ground pepper. Mix again.

Red Cabbage Salad

Healthy crunchy salad……….

Ingredients:

1 lbs head red cabbage (5 cups shredded)
1 small green pepper (1/4 cup diced )
1 carrot
1/2 onion
1 sweet apple
1/2 lemon
4 tablespoons vinegar
salt, pepper
1 tablespoon sugar
2-3 tablespoons olive oil

Instructions:  

Boil 6 cups of water in a pot, add 4 tablespoons vinegar, when water is boiling turn off the heat and add cored and finely shredded red cabbage. Cover the pot and let sit for 5 minutes, no longer. Drain. Meanwhile, peel and grate a carrot and apple, dice onion and green pepper very thin. Toss together red cabbage, carrots, apple, onion, and green pepper. Add extra virgin olive oil, freshly squeezed lemon juice, sugar, salt and ground pepper. Taste, adjust seasonings and allow to sit for 20 minutes in the refrigerator, then serve.
