Vegetable Pancakes

Ingredients:

vegetables: 1 cup diced carrots,  1 cup corn, small bunch broccoli
2 eggs 
2 tablespoons all-purpose flour
salt, pepper

Instrcutions:

Steam carrots, broccoli and corn. In a bowl, mix together steamed vegetables, beaten eggs, flour, salt and pepper. Heat up oil on a frying pan, create small pancakes (fits around 3 on a medium size frying pan) and fry on both sides until golden brown. They can be served for breakfast and lunch as well as a side dish for dinner.

Green Scrambled Eggs (Spinach, Scallion and Leek)

Ingredients:

4 organic eggs
2-3 tablespoons chopped leek
2 tablespoons chopped scallion
8 leaves chopped baby spinach
5 slices ham (without preservatives)
1 tablespoon coconut oil
salt, pepper

Instructions:

Wash and chop a spinach, leek and scallions. In a medium skillet heat a coconut oil over medium heat. Add leek and cook 1 minute, add ham and cook another 1 minute, then add spinach and cook 1 minute. At the end add the eggs and season with salt and fresh ground pepper. Combine together. Cook for 3- 5 minutes, stirring often. Place a mixture on a plate and garnish with chopped scallion.

Hard Boiled Eggs with Mayonnaise

Ingredients:

6 teaspoons Homemade Healthy Mayonnaise
eggs
scallion
sweet red paprika powder 
salt, pepper

Instructions:

Bring water to a boil in a pot. Carefully, place the eggs in the water. Boil the eggs for exactly 8 minutes. Pour water out from eggs and pour cold water to shock eggs and stop from cooking.

Peel the eggs and cut in half lengthwise. Place on each egg 1 teaspoon Homemade Healthy Mayonnaise , season with salt and fresh ground pepper, then sprinkle with sweet red paprika powder. Garnish with chopped scallion.

Scrambled Eggs with Noodles

A new way for scrambled eggs……………..

Ingredients:

1 cup cooked Homemade Egg Noodles
3 large eggs
salt, fresh ground pepper
scallion for garnish
1 tablespoon butter

Instructions:

Heat a medium skillet over medium-high heat. Place the previously prepared noodles into hot butter, then add the eggs, salt and pepper,combine together. Cook for 3- 5 minutes, stirring often. Place a mixture on a plate and garnish with chopped scallion.

Homemade Egg Noodles

Ingredients:

1 3/4 cups all-purpose flour
3 large eggs
1 teaspoon salt
1 teaspoon butter in room temperature

Instructions:

In a bowl, mix flour and salt. Add eggs and butter, mix thoroughly, knead until smooth and form a  ball. The dough should be a little hard but not too hard.  If dough is too dry add 1 tablespoon water or more butter,  if too sticky add flour. Cover the bowl with plastic wrap and let sit  about 20 minutes .

After this time, divide the dough into 3 parts. Flatten each piece first in hands, sprinkle a pastry board with flour, then roll out the dough, 1 part at a time, into paper-thin round pancake, leave to dry (around 20 minutes), keeping remaining dough covered. Dough of a perfect hardness requires a lot of strength at sheeting.

Roll the round pancake into a roll and cut in desired size. Sprinkle the noodles on pastry board and leave to dry  for a few minutes.

Before cooking, shake thoroughly with flour. Cook in  8 cups boiling salted water (1 tablespoon salt) until tender.Drain thoroughly.

Smoked Salmon Salad

Very easy and quick salad to make. Great for lunch.

Ingredients:

2 hard boiled eggs
1 avocado
2 cucumbers
2 tablespoons chopped fine dill
6 oz Nova salmon
1/2 lemon
pepper

Instructions:

Dice eggs, avocado, cucumber, and salmon. Add dill, juiced lemon and pepper. In a bowl, mix everything together. Serve on bread, crackers or endive.

Eggs under Cloud with Home Fries

Yummy late breakfast for a lazy weekend….

Ingredients:

5 cooked red potatoes
4 eggs
1 small onion
1 small red pepper
salt, pepper, garlic powder, paprika
olive oil

Instructions:

Home Fries: Cook potatoes until tender but firm. Let potatoes to cool off. Cut the potatoes in a quarters.  Transfer the potatoes to a sheet pan and spread out into 1 layer. Sprinkle the potatoes with salt, pepper, paprika, garlic powder. Cut onion and pepper into thin stripes, place over potatoes.  Add olive oil. Mix well. Roast in the oven until browned and crisp about 1 hour.

Eggs: In a skillet, heat up 1 tablespoon of coconut oil. Add the eggs gently into the skillet. Cook 2 minutes, after add 1/4 cup of water and cover. Cook until the white is opaque and the yolk gets cover by white cloud. Then sprinkle with salt and pepper as desired. Now just slide the egg from the skillet onto a plate. Serve with home fries, salad and toast.

Salad: Dice cucumber and cherry tomatoes. In a bowl, mix tomatoes and cucumber, add salt, pepper, juiced lemon, and dill. Mix well.
